Vegetables for breakfast!

I was all over the place today for work and was out of town when lunchtime hit. I ran through a BBQ joint that I knew had baked potatoes. I ordered one potato, plain, and a side of corn.

This afternoon I had the best snack ever. We found some pears in the frig at work that were a gift from one of our vendors. They were so bright and crisp. I also made a hot cup of Hibiscus tea. Sooooo good.

I had a few of my Energy Bites on the bike tonight for fuel. They’re so easy to make and they freeze really well making them perfect for grabbing before a workout.

Energy Bites

1 cup oats

1/2 cup nut butter (I used almond butter)

1/2 cup ground flax seeds

1/2 cup raisins

1/3 cup pure maple syrup

1 tsp vanilla

1 tsp cinnamon

Other optional ingredients: chia seeds, cacao nibs, unsweetened coconut flakes. Stir all ingredients together until mixed. Roll into 1″ diameter balls. Keep refrigerated for up to a week, or store in the freezer.

On the way home I picked up another chopped salad from Doc Greens…gosh, that’s 3 times this week…and I added some hummus that I quickly whipped up. I should get extra points for skipping the croutons, dressing and pita bread, don’t you think?



Breakfast this morning was my usual steamed vegetables and a potato. I go in phases with the kind of vegetables I eat as well as the kind of potato. This week I’m loving mixed vegetables and sweet potatoes.

I am still real low on groceries in the house, but I am getting by. I’ve been saving a lot of money by scraping by. I cooked up some southern style black eyed peas for lunch and had them with corn and hot sauce. I am really into adding hot sauce right now for some extra flavor. I figured this meal cost me less than $2. That’s fantastic! It was hearty and satisfying, it really filled me up. I wasn’t hungry until dinner time.

For dinner I cooked a Russet potato in the oven and had a Potato Bar. That’s what we call it in my family. Bake some potatoes and set an array of toppings out on the counter. Yum!! I made my potato half black eyed peas, half chili and corn. Filling and satisfying.

As I was doing the dishes after dinner, I got a craving for something sweet. I have learned that craving is a conditioned response from having dessert after dinner for so many meals in my life. It comes up from time to time, and I know it came up tonight since I gave into the craving earlier this week with the sweet energy bites in the evening. I helped myself out by taking the raisins out of the house last night. Now I don’t have all the ingredients to make a sweet treat so it isn’t tempting me. I told myself the kitchen is closed and I retreated to the couch to type up this post.

How am I feeling about everything? Happy and free. Those are the two best words to describe it thus far. I am determined. I believe. And I am so looking forward to what this year is going to bring. Consistent action (even small steps) lead to big change over time!





Breakfast today was steamed mixed vegetables and 2 Yukon gold potatoes. Yukon’s are so creamy. It’s like they’re made with cream cheese.

For lunch I had steamed broccoli and cauliflower with crispy hashbrowns and a little hot sauce.

In the afternoon I had tea with soy milk (not pictured). And on my way to Cycling I had 2 bananas.

Energy bites made with Oats, Flaxseed, Almond Butter, Raisins, Maple Syrup and Cinnamon fueled my ride tonight.

And after Cycling, I picked up another chopped salad from Doc Greens. This time with quinoa.



Been living in Frozen Town and I didn’t leave the house all weekend. I stayed in where it’s warm and I ate up all my food. Woke this morning with nothing in the house to pack up and take to work. So, I winged it all day today. And I’d say I did pretty good.

The girls got coffee and like I said, Frozen Town – today begged for a hot drink in my hands. I have been Espresso-free for 15 days (Wow!) but I am enjoying tea. So I chose Earl Grey with steamed Soy. For breakfast, I heated up some Yukon Golds and a Sweet Potato. I keep potatoes in my desk at the office – always prepared. I also keep frozen veggies in the freezer but I need to re-stock.

For lunch, I picked up a Build Your Own Salad from Doc Greens. In my chopped salad was: Field Greens, Cucumber, Tomato, Shredded Carrot, Black Beans and Corn Salsa. After I placed my order, I realized they now serve Quinoa on the Salad Bar. I know what I’m getting next time! I skipped the dressing and the pita bread they give you, and added a few of my own beans for more protein and satiation.

This afternoon I got the muchies!! I wanted something crunchy. I had potatoes and beans on me and that’s it. But I didn’t want them. Too soft. I wanted to crunch down on something. I came *this close* to snagging a bag of trail mix. There isn’t inherently anything wrong with trail mix, but the packaged options at the Mini Mart at my office are all roasted and salted and contain, gasp, m&m’s – which I would have totally been ok with today. Additionally, nuts are one of my main trigger foods. Once I start, I can’t stop. Like I said, *this close* however, something in that moment shifted…thank you, Universe!…and I chose a Red Delicious Apple. Crunchy, Sweet and Hydrating. It was perfect. Also, have you heard Apples provide more energy than Caffeine? Super interesting, right?

Grocery shopping in 15 degree weather just wasn’t happening tonight, so I called in an order for sushi. Edamame can be prepared without the salt. Just ask! I am learning so many things. I had avocado roll, asparagus cucumber avocado roll, and mango roll.

The snackies continued into the night and I made a sweet treat for after dinner. I mixed together Oats, Almond Butter, Flax Seed, Maple Syrup, Vanilla, Cacao Powder, Maca Powder, Raisins and Cinnamon and made little Energy Bites. My goal is to discover my body’s natural weight, so I won’t be making sweet treats very often.
